Agriculture occupies an important place Sauzet. Cereals, garlic, sunflowers, tomatoes, bring all the charm of a familiar and welcoming country.
Sauzet kept in memory the Dauphin Louis (later Louis XI) who made several visits to his beloved castle. As king he restored in 1477 that princely castle with intersecting ribs, fresco paintings, large fireplaces.
The Wars of Religion saw the destruction of the castle ordered by the Cardinal Richelieu. After several successive owners, the Lordship eventually given to the Prince of Monaco and his descendants kept it until the Revolution of 1790.
